In a wide rimmed bowl, mix together the coconut milk and baking powder.
Spread the shredded coconut out on a plate.
Take each slice of bread and first soak in the coconut milk mixture and a few seconds before transferring to the shredded coconut plate and fully coating the slice in the coconut.
Space both the coated slices of bread in your air fryer, close it, and set the temperature to 350°F and 4 minutes.
Once done, remove and top with maple syrup or your favorite French toast toppings!
