Stuffed Chicken Breast may seem intimidating but it doesn't have to be! It is easier and faster to make than ever before thanks to the air fryer. Don't miss this delicious spinach stuffed chicken breasts that are low carb and so yummy!
In a medium skillet over medium heat, add oil to the pan and sauté spinach 3 minutes. Sprinkle garlic and salt onto spinach and add onion to the pan.
Continue sautéing 3 more minutes, then remove from heat and place in medium bowl. Fold feta into spinach mixture.
Slice a roughly 4" slit into the side of each chicken breast, lengthwise. Spoon half of the mixture into each piece and secure closed with a couple toothpicks. Sprinkle outside of chicken with remaining garlic powder and salt. Drizzle with avocado oil. Place chicken breasts into the air fryer basket.
Adjust the temperature to 350°F and set the timer for 25 minutes.
When completely cooked chicken should be golden brown and have an internal temperature of at least 165°F. Slice and serve warm.
