Slice salmon into 1/4"-thick slices, 4" long.
Place strips into a large storage bag or a covered bowl and add remaining ingredients. Allow to marinate for 2 hours in the refrigerator.
Place each strip into the air fryer basket in a single layer.
Adjust the temperature to 140°F and set the timer for 4 hours.
Cool then store in a sealed container until ready to eat.
