Keto Air Fryer Peppercorn-Crusted Beef Tenderloin

 2 lbs beef tenderloin, 3 inches in diameter, trimmed and tied
 3 tbsp whole green peppercorns, coarsely ground
 2 tbsp avocado oil
 1 tsp coarse salt
 2 tsp minced roasted garlic

In a small bowl, mix the oil, salt and roasted garlic. Brush it over the beef tenderloin.

Place the ground peppercorns onto a plate and roll the tenderloin through them, creating a crust. Place tenderloin into the air fryer basket.

Adjust the temperature to 400°F and set the timer for 25 minutes.

Turn the tenderloin halfway through the cooking time.

Allow meat to rest 10 minutes before slicing.
