Keto Air Fryer Pancake Cake

 ½ cup all-purpose flour
 ¼ cup powdered erythritol
 ½ tsp baking powder
 2 tbsp vegetable oil
 1 large egg
 ½ tsp unflavored gelatin
 ½ tsp vanilla extract
 ½ tsp ground cinnamon

In a large bowl, mix flour, erythritol, and baking powder. Add oil, egg, gelatin, vanilla, and cinnamon. Pour into 6" round baking pan.

Place pan into the air fryer basket.

Adjust the temperature to 300°F and set the timer for 7 minutes.

When the cake is completely cooked, a toothpick will come out clean. Cut cake into four and serve.
