Keto Air Fryer Italian Baked Egg and Veggies

 2 tbsp olive oil
 1 small zucchini, sliced lengthwise and quartered
 1 red bell pepper, chopped
 1 cup baby spinach, chopped
 1 cup chopped fresh tomato
 2 large eggs
 ¼ tsp onion powder
 ¼ tsp garlic powder
 ½ tsp dried basil
 ¼ tsp dried oregano

Grease two (4") ramekins with olive oil.

In a large bowl, toss zucchini, red pepper, spinach, and tomato. Divide the mixture in two and place half in each ramekin.

Crack an egg on top of each ramekin and sprinkle with onion powder, garlic powder, basil, and oregano. Place into the air fryer basket.

Adjust the temperature to 330°F and set the timer for 10 minutes. Serve immediately.
