 2 green tomatoes
 ¼ cup almond flour
 1 large egg
  cup grated Parmesan cheese
 salt and pepper to taste
 ¼ tsp paprika
 1 cup crushed pork rind crumbs

Slice tomatoes into 1/2"-thick slices. In a medium bowl, whisk the egg. In a large bowl, mix the almond flour and Parmesan.

Dip each tomato slice into the egg, then dredge in the almond flour mixture, followed by the pork rinds. Place the slices into the air fryer basket.

Adjust the temperature to 400°F and set the timer for 7 minutes.

Flip the slices halfway through the cooking time. Serve immediately.
