In a medium skillet over medium heat, brown the ground beef about 7– 10 minutes. Drain the fat. Return skillet to stove.
In a large microwave-safe bowl, add mozzarella, almond flour, and cream cheese. Microwave for 1 minute. Stir until smooth. Form the mixture into a ball.
Place dough between two sheets of parchment and roll out to 1/4" thickness. Cut the dough into four squares.
Place 1/4 of ground beef onto the bottom half of each square. Fold the dough over and roll the edges up or press with a wet fork to close.
Crack egg into small bowl and whisk. Brush egg over empanadas.
Cut a piece of parchment to fit your air fryer basket and place the empanadas on the parchment. Place into the air fryer basket.
Adjust the temperature to 400°F and set the timer for 10 minutes.
Flip the empanadas halfway through the cooking time. Serve warm.
