Keto Air Fryer Classic Mini Meatloaf

 1 lb lean ground beef
 1 egg, beaten
 1 small onion, finely chopped
 1 tbsp chopped fresh thyme
 1 tsp salt
 black pepper, to taste
 avocado oil
 ½ green bell pepper, seeded and diced
 3 tbsp coconut flour
 1 tbsp Worcestershire sauce
 2 tbsp tomato paste
 ¼ cup water
 1 tbsp powdered erythritol

In a large bowl, combine ground beef, onion, pepper, egg, and coconut flour. Pour in the Worcestershire sauce and add the garlic powder and thyme to the bowl. Mix until fully combined.

Divide the mixture into two and place into two (4") loaf baking pans.

In a small bowl, mix the tomato paste, water, and erythritol. Spoon half the mixture over each loaf.

Working in batches if necessary, place loaf pans into the air fryer basket.

Adjust the temperature to 350°F and set the timer for 25 minutes or until internal temperature is 180°F. Serve warm.
