  cup cocoa powder
 1 tsp baking powder
 sea salt
 3 large eggs
 1 tsp vanilla extract
 ½ cup low carb mayonnaise
 1 cup erythritol or sweetner of your choice

In a large bowl, mix all ingredients until smooth.

Pour batter into a 6" round baking pan. Place into the air fryer basket.

Adjust the temperature to 300°F and set the timer for 25 minutes.

When done, a toothpick inserted in center will come out clean. Allow cake to cool completely, or it will crumble when moved.

    • Hi Janet, this is also Keto-friendly, the ingredients you need are:

      1 1/2 cups butter (softened)
      10 tbsp Cocoa powder (1/2 cup + 2 tbsp)
      1/2 cup Powdered Monk Fruit Allulose Blend
      1 tsp Vanilla extract
      1 tbsp Heavy cream

      In a bowl, beat the butter for about 1 minute, until fluffy.

      Beat in the cocoa powder, sweetener, and vanilla extract, starting at low speed and increasing to high once it gets incorporated. Beat for 30 seconds on high.

      Beat in heavy cream. (You can add more to thin out as needed.) Start low, then beat for 30 seconds on high again, until smooth.
