Best of all and contrary to what you may think, you can make a perfectly crispy chicken cheese quesadilla in your air fryer, wihtout having to go out to a fancy restaurant. The air fryer gives this quesadilla the crispy goodness while doing a great job of melting the inside to warm gooey goodness.
You can use pre-made fajita chicken that you get at the store or you can make your own shredded fajita chicken.
So, forget Taco Tuesday and opt for these simple and delicious air fryer quesadillas. Easily paired with a healthy side salad. Plus, think about it, when cooking at home you can forego the gobs of butter used by many restaurants while still providing the great flavor and crispy texture most people prefer. Unlike pan fried quesadillas, preparing this delicious dish requires only a modest coat of olive oil spray, leaving your tortilla light and crisp, rather than dense and soggy.

Place 1 soft taco shell in pan in preheated Air Fryer. Spray pan lightly with vegetable oil.
Place shredded cheese on shell. (you can use as much or as little as you’d like.)
Spread out fajita chicken strips so they are in a single layer.
Put your onions and green peppers on top of your chicken.
Add more shredded cheese and place another soft taco shell on top and spray lightly with vegetable oil.
Set timer for 4 minutes, then flip over carefully with large spatula. If it’s not crispy enough for you, leave in for a couple of extra minutes.
When done, remove and cut into 4 slices or 6 slices. Serve with Salsa and sour cream if desired.
