In a large microwave-safe bowl, add coconut flour, Provolone, and 1 ounce cream cheese. Mix and then microwave for 1 minute.
Stir and add egg yolks to the bowl. Continue stirring until soft dough forms. Add 1/2 cup erythritol to dough and 1 teaspoon vanilla.
Cut a piece of parchment to fit your air fryer basket. Wet your hands with warm water and press out the dough into a 1/4"-thick rectangle.
In a medium bowl, mix remaining cream cheese, erythritol, and vanilla. Place this cream cheese mixture on the right half of the dough rectangle. Fold over the left side of the dough and press to seal. Place into the air fryer basket.
Adjust the temperature to 330°F and set the timer for 15 minutes.
After 7 minutes, flip over the Danish. When the timer beeps, remove the Danish from parchment and allow to completely cool before cutting.
