Who doesn't love a good old fashioned Mexican quesadilla, well you can enjoy all the classic quesadilla flavors with a healthier twist with this yummy veggie quesadilla you can whip up literally in just a few minutes in your air fryer.

 1 tbsp avocado oil
 ½ medium green bell pepper, seeded and chopped
 ¼ cup diced red onion
 ¼ cup chopped white mushrooms
 4 flatbread dough tortillas
  cup shredded Colby-Monterey Jack cheese
 ½ avocado, peeled, pitted, and mashed
 ¼ cup sour cream
 ¼ cup mild salsa

In a medium skillet over medium heat, warm avocado oil. Add pepper, onion, and mushrooms to skillet and sauté until peppers begin to soften, 3 5 minutes.

Place two tortillas on a work surface and sprinkle each with half of cheese. Top with sautéed veggies, sprinkle with remaining cheese, and place remaining two tortillas on top. Place quesadillas carefully into the air fryer basket.

Adjust the temperature to 400°F and set the timer for 5 minutes.

Flip the quesadillas halfway through the cooking time. Serve warm with avocado, sour cream, and salsa.
