In the mood for Mexican food? How about these yummy Ground Beef Taco Rolls that can be easily made in your air fryer! In just a few minutes and with just a few ingredients you can enjoy all the classic flavors of tasty tacos minus the extra carbs!

 ½ lb lean ground beef
  cup water
 1 tbsp chili powder
 2 tsp cumin
 ½ tsp garlic powder
 ¼ tsp dried oregano
 ¼ cup canned diced tomatoes and chiles, drained
 2 tbsp chopped cilantro
 1 ½ cups shredded Colby-Monterey Jack cheese
 ½ cup almond flour
 2 oz cream cheese
 1 large egg

In a medium skillet over medium heat, brown the ground beef about 7 10 minutes. When meat is fully cooked, drain.

Add water to skillet and stir in chili powder, cumin, garlic powder, oregano, and tomatoes with chiles. Add cilantro. Bring to a boil, then reduce heat to simmer for 3 minutes.

In a large microwave-safe bowl, place cheese, almond flour, cream cheese, and egg. Microwave for 1 minute. Stir the mixture quickly until smooth ball of dough forms.

Cut a piece of parchment for your work surface. Press the dough into a large rectangle on the parchment, wetting your hands to prevent the dough from sticking as necessary. Cut the dough into eight rectangles.

On each rectangle place a few spoons of the meat mixture. Fold the short ends of each roll toward the center and roll the length as you would a burrito.

Cut a piece of parchment to fit your air fryer basket. Place taco rolls onto the parchment and place into the air fryer basket.

Adjust the temperature to 360°F and set the timer for 10 minutes. Flip halfway through the cooking time.

Allow to cool 10 minutes before serving.
