Keto Air Fryer Empanadas

 2 tbsp avocado oil
 ½ lb lean ground beef
 1 small onion, finely chopped
 1 tsp minced garlic
 ½ tsp salt
 ¼ tsp black pepper
 ½ tsp ground cumin
 ½ tsp smoked paprika
 1 ½ cups shredded part skim mozzarella cheese
 1 oz cream cheese, cubed
 ¾ cup blanched finely ground almond flour
 1 large egg
 ½ cup water

In a medium skillet over medium heat, brown the ground beef about 7 10 minutes. Drain the fat. Return skillet to stove.

Add water and onion to the skillet. Stir and sprinkle with garlic, salt, pepper, paprika, and cumin. Reduce heat and simmer an additional 3 5 minutes. Remove from heat and set aside.

In a large microwave-safe bowl, add mozzarella, almond flour, and cream cheese. Microwave for 1 minute. Stir until smooth. Form the mixture into a ball.

Place dough between two sheets of parchment and roll out to 1/4" thickness. Cut the dough into four squares.
Place 1/4 of ground beef onto the bottom half of each square. Fold the dough over and roll the edges up or press with a wet fork to close.

Crack egg into small bowl and whisk. Brush egg over empanadas.

Cut a piece of parchment to fit your air fryer basket and place the empanadas on the parchment. Place into the air fryer basket.

Adjust the temperature to 400°F and set the timer for 10 minutes.

Flip the empanadas halfway through the cooking time. Serve warm.
