In the mood for something sweet, low carb and amazing? We hear you, lemon poppy seed cake is a classic everyone loves and if you are not a great baker do not panic, this is one of those boxed mixes that do fantastic in the Air Fryer.
In a large bowl, mix flour, erythritol, baking powder, almond milk, eggs, and vanilla.
In another mixing bowl, mix together the lemon juice and vegetable oil then add to the batter.
Using a fine grater, zest the lemon and add 1 tablespoon zest to the batter and stir. Add poppy seeds to batter.
Pour batter into nonstick 6" round cake pan. Place pan into the air fryer basket.
Adjust the temperature to 300°F and set the timer for 14 minutes.
When fully cooked, a toothpick inserted in center will come out mostly clean. The cake will finish cooking and firm up as it cools. Serve at room temperature.
